Directions

Preheat oven: 325 degrees. Lightly spray mini muffin pan with cooking spray. Set aside.

Apple Cider Mixture:
In a saucepan add, apple cider, cinnamon stick, cloves, ginger, and orange zest. Simmer until reduced by 1/2. Remove from heat and strain. Should make ½-cup. Pour into small mixing bowl. Set aside to cool.

After apple cider mixture has cooled down add buttermilk, egg, vanilla, sugar, brown sugar, and melted butter. Whisk until combined. Set aside.

Donut Batter:
In a large mixing bowl, add flour, nutmeg, baking soda, baking powder, and salt. Whisk together. Add cider mixture. Mix using a spatula until combined. Next, fold in apple cubes until evenly coated. 

Next, scoop batter into the mini muffin pan cavities with a cookie dough scoop.  Bake for 8-10 minutes. Remove from oven, and cool for about 5 minutes. Then flip over and release donuts from muffin pan onto a cooling rack.

Topping:
Whisk together both sugar and cinnamon in a small bowl. 

Next, in a separate microwavable bowl, add ½ stick butter. Melt butter for about 15 seconds or until melted. 

With a pastry brush, gently brush butter over all the donuts. Next, gently roll donuts into the sugar cinnamon mixture until evenly coated. Place on a plate. Serve.
