A KY Proud Recipe
Baked Summer Squash
1 tbsp olive oil 1 tbsp butter 2 medium yellow summer squash, sliced thinly Kentucky Proud from local producer 2 medium zucchini, sliced thinly Kentucky Proud from local producer 1 yellow onion, thinly sliced Kentucky Proud from local producer ½ cup lowfat sour cream 1 cup Kentucky Proud shredded cheese Salt and pepper 1 cup panko bread crumbs 2 tbsp butter 2 tbsp chopped oregano or 1 tbsp dried oregano Kentucky Proud from local producer
Preheat oven to 375 degrees. Butter a casserole dish. Heat the oil in a large skillet medium heat. Sauté the squash, onion, and butter until soft. Transfer to a bowl and stir in the sour cream and cheese. Add salt and pepper, to taste. Melt 2 tbsp butter in a saucepan and stir in the bread crumbs and herbs. Place in the prepared casserole dish and sprinkle the buttery crumbs evenly over the top. Bake for 20 minutes or until the top is golden and bubbly.
