Apple Potato Salad

1 lb red potatoes, scrubbed, but not peeled 2 tbsp mustard 1 tbsp honey 1 tbsp cider vinegar 3 tbsp olive oil 2 ribs celery, diced 1 granny smith apple, diced 2 tbsp fresh dill, chopped 1 tbsp parsley, chopped Salt and pepper, to taste
Dice red potatoes into 1/2 inch cubes and place in a pot of cold water. Bring the potatoes to a simmer over high heat and cook until tender, about 10 minutes. In a large bowl, whisk together the mustard, honey, vinegar, and oil. Once the potatoes are tender when pierced with a knife, drain and transfer to the bowl with the dressing. Add the celery, apple, dill, and parsley and toss to combine. Season with salt and pepper and serve.
