1 1/2 cups Kentucky Proud flour 3/4 tsp baking soda 1/2 tsp baking powder 1/2 tsp salt 1 tsp cinnamon 1/4 cup oil 1/2 cup Kentucky Proud applesauce 1/4 cup nonfat greek yogurt 2 Kentucky Proud eggs 1 tsp Kentucky Proud vanilla 1/2 cup brown sugar 1/2 cup sugar 2 cups grated Kentucky Proud squash or zucchini
Preheat oven to 350 degrees. In a large bowl, combine flour, baking soda, baking powder, salt, and cinnamon. In a separate medium sized bowl, mix oil, applesauce, eggs, vanilla, sugars, and squash. Add the wet ingredients to the dry and mix just until combined. Pour batter into a 9x5x3-inch loaf pan. Alternatively, batter can be made into muffins (either grease and flour tin or use paper liners) or mini loaves. Be cautious not to overfill pans. Bake for 45-55 minutes, or until an inserted toothpick comes out clean. Muffins will take about 20-25 minutes. Serve with Cinnamon Cream Cheese Spread, if desired. 8 oz cream cheese, softened 1/4 cup sugar 1 tsp Kentucky Proud vanilla 1/2 tsp cinnamon Instructions Stir all ingredients together with a spatula until smooth and well combined. If desired, whip with an electric mixer for a fluffier consistency.
